This is quite niche and requires some technical knowledge, but if you want to stop Windows from prompting to upgrade your version, then this utility from Steve Gibson at GRC may be of interest.
From their website “InControl is a one-button utility which gives users control over
all non-security updates to their Windows 10 and 11 systems.”
I have used it to good effect on laptops which could run Windows 11, but where I choose not to.
